Recommendations on re-directing an indexed 404 page with a replacment URL? Using dynamic pages, updated on our side, but still be pulled with old tile and meta description.

Try to keep the directory depth similar, if you can, but really it doesn't make too much of an impact when creating a 301 redirect.
Normally, I'd keep the content very similar for a while before changing it drastically (especially meta and heager tags), but if you're being crawled regularly, you won't see much of an impact unless you do something drastic.
Google's much better at handling major architecture changes than they were 10 years ago. I can't see any problems with a straightforward 301 redirect.
