I'd really like her to at least eat this one vegetable. I just don't know how to cook in a way that she will accept it.

There are happy tot veggie pouches, my daughter and son love those as they have veggies mixed with fruit. So maybe make your own pouches and blend fruit with spinach etc?

I have made a stuffing casserole with broccoli mixed in and she did eat that. It’s basically stuffing, cream of mushroom soup, butter & broccoli.

Broccoli is just about the only vegetable my 2 year old will eat somewhat consistently these days. I simmer it in well salted water for 5-8 minutes until it's soft. Not falling apart, but just a bit softer than I would make it if it was just for me. Then I drain it and use the same pot to heat some butter or olive oil, saute some minced garlic, then stir into the broccoli.
