Can anyone recommend a good gut health diet that works for mainly weight loss but also gut health? Phatt Diet? CSIRO?

Very individual. Things that affect one's body via food include balance and when carbohydrates, protein and fats are eaten, quantities eaten, stress, water consumption (purity, how much, when taken in relation to meals as it will dilute stomach acids), having enough salt, fibre, eating organic or regeneratively-produced food (better balance of nutrients compared to food produced with synthetic fertilizers and chemical protectants), How much processed foods including takeaway, highly processed are eaten as most have too much PUFA (poly unsaturated fatty acids) and things that suppress the gut microbiome (including plant antinutrients, preservatives, emulsifiers and citric acid from fungal production methods usually from China).

You just need to experiment but Mediterranean Diet a good start.

What works for one, won’t for another however, I would suggest following a Mediterranean style along with MBSR without knowing any of your health information.
