Hotels are fine, out and about just respect the culture.. You'll be fine. Dubai is very set up for westeners. Some places will be closed so plan ahead, but just as they do here they work during the day and except that not everyone is following this practice.

You'll have a great time....

Went to Dubai in may this year when it was Ramadan and absolutely loved it. We are a family of 5 with a 3, 6, 8yr old. In most resorts there is only a few restrictions which was no entertainment, food and drink not served in lobby area and to think about how you dress. Kids are allowed to eat and drink in public it’s only adults which it really affects. Went to Dubai park and resorts and the place was dead. Will definitely return again during Ramadan.
