We’re booking 18 nights in London next spring at a VRBO. Would like a short side trip to Paris.
Mainly to shop, people watch, visit Musee D’Orsay, and maybe take an evening river cruise.
How many days should we book in Paris and where should we book, considering we can’t cancel any of our nights in London? Assuming we should rake EuroStar. Where should we stay? Champs Élysées?

Warwick Hotel Paris is very nice and only a few steps away from Champs Elysees. Stayed there twice. 3 nights is enough. Transport is easy to tourist sites.
I think 3 nights in Paris would work. You could do it in less or more, but cognizant that you want to have enough time to enjoy Paris but not be paying for an empty place in London. And yes, Eurostar is best and easiest.
The sights in Paris, like in London, are spread out so there's no one main area to stay in. The eiffel tower is far from the louvre which is far from sacre coeur, etc. Not horribly far, but most people wouldn't walk it. So anywhere central along the Seine near public transit would be my pick.

I think Le Merais is the best area for shopping and it’s pretty central to take Metro to other sites.
Oh, make sure to visit Musee L'Orangerie. it doesn't take much time to go through, but it was really cool.
Can you book an open jaw ticket where you fly into London and out of Paris? I’m cheap and I hate paying for an empty accommodation. Otherwise you could get a taste of Paris in 2 nights/3 days.
