Starting to need to book flights versus buses (e.g Vietnam to South Thailand). Looking at flights about 2 weeks out and prices seem high (around $120 USD)
Is this common post-Covid or am I looking at the wrong websites?
Is it cheaper to book last minute at the airport?

Air Asia still cheap , but post COVID certainly more expensive now.

I found flights on March 29th from Saigon to Phuket for 92€ and to Bangkok for even. Just 48€. I think these are decent prices. Just check out different days and different airports. On Skyscanner I would just put in Ho Chi Minh city and as destination Thailand. It will show you the cheapest airports and most of them are in Bangkok.

The earlier you book the better, like months before- closer to travel date the more expensive.
