Moab is small, really small. Best places to see are the parks. Don't forget the Dead Horse Point State Park.

Don’t miss Goblin Valley State Park. It is out in the middle of nowhere, but it’s so worth it. We did it on the drive between Moab and Capitol Reef.

Hi. Don’t forget to go to Dead Horse Canyon - especially at sunset. There used to be a great burrito/taco food truck in the town of Moab, but I don’t know if it’s still there. Search “cheap eats Moab” to see if it’s still there.
Do a 4wd tour in Arches/Capital Reed. We went totally off the beaten path to huge arches and we were literally the only people anywhere around. It was great. (And that was in summer and the line for Delicate Arch was a several hour wait)
I really enjoy visiting the art the Natives left for us to admire on the rock walls. Petroglyph sites are abundant around Moab (Newspaper Rock in the southern part of Canyonlands is a little drive off of US191, which you will be driving on the way to Moab.
If you like microbrew beer and really reasonably priced food (or at least it was back in 2019...) check out Moab Brewery. Great food. We were there for 2 or 3 nights and ate there at least twice!.
