Homemade Salted Caramel chocolate tarts! And I still have Caramel and pastry left over (I'll post what I did with that).

So much better than shop bought, and cheaper to make!

Hi, Thank you. I really don't use recipes but this is what I did. I made a sweet pastry (I wing it) blind baked the cases, in a pan I made a caramel, (sugar butter and cream) Heat sugar until melted and golden then add butter then cream and good sea/rock salt I used about 2tsp stir like mad! (go online to see how to do it as my instructions are vague and be careful as the sugar gets so hot it will burn) After the cases and caramel are cool I put about a tbsp of caramel in each of the pastry shells and then topped with a chocolate ganache - its just hot cream then melt in dark choc 50/50 id say) I did a bit of fancy sugar stuff because I just wanted to try it out. worked ok! x Hope this is ok.
