I'm just looking for advice really, tips with having both? Absorption of the gluten free products, is it different to gluten products, and finally any good recommendations for gluten free substitutes?

Yesterday I found out I'm coeliac too [with diabetes]
Lots of casseroles using Aldi or Lidl stock pots as they are gf and so much cheaper roll meat in cornflour. Morrisons pasty mix , and batter mix very good . Tesco brownies mix lots less sugar than pre made. Lots of homemade rice pudding
I'm not coeliac but I am sensitive to gluten. Look for becky excell books, they have a carb count

I’m a type 1 and a celiac too! I really struggle tbh! Join some celiac pages on here I’ve found that helps a lot
I am coeliac & Type 1 too. I found that gluten free products tend to be much higher in fat and that can cause issues with increased insulin needs in the late post meal window (3-8 hours after a meal).
Gluten free alternatives are improving, but have a reputation of being simply awful. I switched toa whole food plant based diet around 7 years ago. This makes it super simple to avoid gluten, because by definition it avoids the processed foods that have so much hidden glutne in them.
