What the ideal humidity should be?

I am new to gardening and have a purchased a greenhouse. Inside that greenhouse I have dug 6” deep squares and lined them with bottomless wooden boxes that we plan to fill with nice soil.

My question is what the ideal humidity should be?

And if anyone has recommendations for the best store bought soil blend?

I plan to compost in the future, but didn’t plan properly this year.

Use peat moss and horse poop.

Get from local nursery, will have good quality, cannot trust stores.

I toss in kitchen scraps when I'm putting the trees in and hot manure because it will be ready for the roots by the time they get that deep. Field dirt from a good garden nursery is great fir the top layer. It's filled with nutrients. It usually looks light and undesirable, but it grows good tasting food.
