Will probably go for 3-7 days depending on the trip.

We love antique stores, mountains, hiking, unique experiences like fruit picking, waterfalls.

Any must sees? I know it’s a broad request

As most people have said North Georgia and Chattanooga area have it all.

Definitely explore the Blue Ridge mountains and the greater Asheville area; it's a little less aggressively hot around then in the mountains versus the rest of North Carolina!

Based on what you listed, Asheville is a must.

The area of Highlands and Cashiers, NC is beautiful and has hiking and mountains as well as cooler temps. If the weather is good, a trip to the Outer Banks would be nice. If you go to Asheville, the restaurants are nice and the Biltmore mansion and grounds are a must see. I love the Southern Highland Crafts Guild shop just outside of Asheville. I think it would be too hot and humid to see Charleston or Savannah.

North Georgia mountains! There is wineries and hiking galore! Ellijay/Gilmer County is the Apple Capital of Georgia. There are many apple houses in the area open year around with everything and anything apples, etc.! Amicalola Falls is close by as well.

Ellijay and Blue Ridge, Georgia!

Tons of hiking, a lake, the Toccoa River for trout fishing, cute boutiques in downtown BR, antique shops all over Ellijay town square; wineries and breweries everywhere and fantastic food! That area is known for its apple orchards, but you’ll be a bit early for apple season.
