Do you think I should buy all my appliances this week during EOFY sales and then work final kitchen design around them?
That's what I did. Don't regret it all and saved money. We ended up getting them all in about six months after buying them and there was a problem with the dishwasher but it was still in the year warranty so was fine and they came and repaired the problem.
Might be a problem with the warranty if you buy in advance and later discover your appliances are faulty - Not sure if it makes a difference if your builder buys the appliance though …

Yes definitely. It makes the design a lot easier if you know exactly what you are intending to install.
Generally your cabinetmaker will need you to finalise all appliances and specs so they can build to fit.

I have projects where either the client asks us to spec, so we include this as part of the design. Or clients purchase themselves, and usually early on in the piece, and we design around them. It’s actually quiet helpful knowing exactly what specs to design for so I reckon go for it if you are sure!

Most appliances are standard sizes that cabinet makers are used to working with. If the deal is really amazing, yes, go for it.
Generally the joiner will need to know what appliances you're having but if you buy them and take delivery too early you will be wasting your warranty while the appliances sit in the packaging. Warranty starts from delivery, not installation. Just something to consider.
If you buy your appliances from Winnings, you can pay a few hundred dollars to lock in the prices and get them delivered when you need them. Having said that, I found the prices jump up and down. Also, some cabinet makers can get an extra 5% off appliances from Winnings but I am not sure if they honour it if there is an end of financial year sale.
