High humidity. Would recommend against Sheetrock. Clapboard would be easiest. Or else shingles (pine or cedar as you prefer) on strapping.
You can use 4' x 8' x 1/2" sheets of duarock or hardibacker. It's used to build tile showers and is waterproof.
You can then paint the interior and get a industrial concrete look.

Something moisture resistant like shiplap. I would want it to breathe too but you have plywood exterior so not sure what your plans are.
Vapor barrier as the innermost layer will be really vital. I think I might have sprung for pressure treated studs and sheathing.
Maybe cement board on the interior. Like you use for showers.
