My 2.5 year old had chicken quesadilla today! This is the first time after he became picky, that he has eaten chicken in any form other than nuggets or fried! And there were real vegetables in there as well, not hidden at all. I am mentally rejoicing and had to share with you all!

For the recipe, I stir fried chicken thigh cut into very small pieces in butter, then added some chopped onions, carrots and zucchini. Garnished with salt. Then heated the tortilla, layered with cheese and the chicken filling and just lightly toasted on both sides. Voila, he ate it all!
