I live in Oklahoma, where there is lots of wind. I am interested in building my own small greenhouse probably 8x10. How is best way to anchor the foundation so the wind doesn’t carry it away?

Anchor the corners into the ground with posts or beams that extend into the ground into cement.

Hey Beverly, I am in Oklahoma also... I got a 5 gallon bucket and placed it around the leg then filled it with cement... I did this on each leg so the weight of this concrete block on each corner holds it down. I added 2 2ft rods of rebar to each block which I hammered into the ground to strengthen them. I also built from scratch with 2 x 4's to add a lot of weight to it.
